Candied Orange Peels

Ingredients

4 orange peels

3 cups sugar

1 cup water

1 Tbs corn syrup

Directions

1. Peels oranges, slice in 1/8 inch pieces. Place peels in cold water, bring to boil, drain, rinse.

2. Boil sugar & water (fresh water). You can add a tablespoon of corn syrup, as "candy insurance", it helps prevent crystallization.

3. When the sugar mixture reaches 230F, add the peels. Lower heat just enough to keep it at a gentle boil.

4. The peels are done when the pith part of the peel is translucent, that will take 30 to 60 minutes.

5. Remove the peels from the syrup a few at a time, lay them out on a cooling rack to drip dry. Let them be for about 45 minutes or so, then you can roll them in sugar, or you can let them dry for a day or so and dip them in chocolate.

Notes

This recipe is similar in process to the way my mom does orange peels.


Alt: cook orange peals in water for 15-20 minutes. Then add sugar and cook for another 10 minutes. Remove from heat and rest overnight . Cook again until liquid is mostly gone and/or it reaches temperature .
